Hana-no-mai Sake Brewery uses high-quality Shizuoka rice, including Yamada-Nishiki grown in western Shizuoka Prefecture.

History of Hana-no-mai Sake Brewery

Hana-no-Mai Sake Brewery was founded in 1864. 160 years have passed since Mr. Ichisaburo Takada, the founder, started the sake brewing business in Miyaguchi, Aratama Village, Omi Province.

The historic Hana-no-mai Brewery is currently headed by Mr. Kennojo Takada, the fourth generation of the company.

We operate a head office and brewery in Miyaguchi, Hamamatsu City, Shizuoka Branch, Tokyo Branch, and a directly managed store in Hamamatsu Station Ekimachi.

In 1951, the company changed its name to its current name, Hana-no-mai Sake Brewery K.K., and expanded its scale.

The meaning of “Hana-no-mai” comes from “Hana-no-Mai,” one of the dedication dances that have been handed down in the Tenryu River system since ancient times.

“Hana” represents the flower of rice, which is the food of life, and is meant to pray for a good harvest.

In 1991, the Toji, a craftsman who carries out the sake brewing process, was selected for the first time from among the company’s employees, and the Toji Tsuchida was born.

The following year, in 1992, a sake made using the locally grown sake rice “Gohyakumangoku” was completed and won the Gold Award at the National New Sake Tasting Competition.

Since then, Hana-no-mai Sake Brewery has won numerous awards at sake competitions and continues to meet the expectations of sake fans as one of Hamamatsu’s leading local sake makers.

Thoughts of Mr. Kazuhito Tsuchida, Honorary Toji, 33 years after becoming Toji at the young age of 33

Mr. Kazuhito Tsuchida, who was selected from among the company’s employees to become the toji, spent his summers in Hokkaido helping his family in the beekeeping business and winters making sake.

Leaving the beekeeping business, he joined Hana-no-mai Sake Brewery as a full-time employee at the age of 20.

Later, at the age of 33, he was selected to be the “toji,” or master brewer, who influences the brewing of Hana-no-mai Sake Brewery, and for the next 33 years he has maintained the traditional taste of the brewery.

At that time, most toji at sake breweries were seasoned veterans around 70 years old, but Mr. Tsuchida was only 33 years old, and people around him were concerned about whether he would be able to handle the job.

However, the year after he became toji, he contributed to the development of Hana-no-mai Sake Brewery by winning a gold medal at the National New Sake Competition.

Currently, as honorary toji at Hana-no-mai Sake Brewery, he works with young toji and brewers to create delicious local sake.

Mr. Tsuchida says that he loves living things, and that yeast, an essential part of sake brewing, is also a cute living creature.

Honorary Toji Tsuchida says, “We make delicious local sake by listening carefully to the fermentation of the yeast, which determines the taste of the sake.”

“Our job is to take the rice that farmers have carefully nurtured and make it taste its best. Otherwise, I feel sorry for the farmers and the rice. Rice production also depends on the hours of sunlight, such as whether the rice harvested that year contains more water or is firmer. We carefully consider these factors and brew our sake with all our heart and soul to create the best sake possible.”

This book was originally based on a poster titled “50 Amazing Things in Hamamatsu and Lake Hamana”. This poster is intended to convey that there are many wonderful things to see in the Hamamatsu/Lake Hamana area. The “Lake of the Sea Textbook” is an even more in-depth study. Both were created for local elementary and junior high school students, and were produced as part of the “Lake Hamana Tourism Area” project, which is working to create a tourist area that encompasses Hamamatsu City and Kosai City. Normally, when we think of tourism, we think of inviting visitors from outside, but why local elementary and junior high school students? There is a reason for this.

Have you ever heard of the term civic pride? It means that citizens have pride and attachment to their region. In the field of tourism, there is now a need to foster this civic pride. So why does fostering civic pride lead to tourism?

When you feel pride and attachment to your region, you can’t help but want to share it with others. “Lake Hamana is an amazing place, so come and visit us!” When residents say these words one after another, they attract people from outside, and the residents want to convey the goodness of Lake Hamana to people who come from outside. It will be. And the goodness of Lake Hamana is passed on from person to person. This is the ideal form.

So what can we do to help residents feel civic pride? First of all, let’s let people know that Lake Hamana is amazing! With that in mind, I created 50 amazing posters. The first thing you need to do is stop and look at the poster. After that, I decided to create a textbook that would be more accessible and readable. First, by getting elementary and junior high school students interested, the children will pass it on to their parents, and the parents will also become interested. I want to create something that will lead to understanding the richness of Lake Hamana.
