This time, we visited Fukumitsu, a long-established gyoza restaurant located in Sato, Chuo Ward, Hamamatsu.

Its signature gyoza are hugely popular, featuring a cabbage-rich filling with a subtle natural sweetness and thick, house-made skins that are pan-fried to a crisp finish.
With their irresistibly crunchy texture that keeps people coming back for more, these gyoza have earned the restaurant a loyal following from both local residents and visitors from across Japan.
In April of this year, Fukumitsu opened its second location in Iwata City.
In this article, we introduce Fukumitsu, a beloved gyoza restaurant known for its uniquely addictive texture.
Fukumitsu is a long-established gyoza restaurant with a history spanning 65 years.
Serving the same beloved flavor since its founding, the restaurant remains extremely popular, with long lines often forming before opening time each day.
Today, the second generation continues to carry on its traditional taste.

Fukumitsu currently operates two locations: the main restaurant and a second branch in Iwata City.
The main restaurant operates without a mid-afternoon break, making it easier to get a table during off-peak hours, such as between 2:00 p.m. and 4:00 p.m.
The defining feature of Fukumitsu’s gyoza is, above all, the way they are cooked.

By using a proprietary golden ratio of sesame oil and soybean oil, the surface of each gyoza is cooked to a crisp, crunchy finish.
The restaurant’s handmade, slightly thicker wrappers further enhance their signature crunchy texture.
The filling contains a generous amount of vegetables, and the thickness of the wrappers is carefully designed to absorb just the right amount of moisture.
The amount of flour used in the dough is adjusted according to the moisture content of the vegetables to achieve the ideal balance.

The menu is simple, offering just two main options: a Gyoza Set Meal and Gyoza (à la carte).

Side dishes such as kimchi and Japanese pickles (Tsukemono) can also be ordered separately.
The set meal comes with rice, miso soup, and a choice of house-made kimchi or Japanese pickles.
When placing your order, the staff will ask whether you would prefer kimchi or Japanese pickles, allowing you to choose whichever you like.
The most popular item on the menu is the Medium Set Meal, which includes 15 pieces of gyoza.

According to the restaurant, the Medium Set Meal is especially popular among first-time visitors.
The second most popular item is the 30-Piece Pan-Fried Gyoza, available as an à la carte order. Customers who want to enjoy just gyoza often order the 30-piece serving.
For takeout, only the pan-fried gyoza are available. You can place your takeout order when ordering your meal, so be sure to check it out if you’d like to take some home.

The restaurant’s house-made kimchi, Japanese pickles, and Japanese mustard (Karashi) are also available for purchase near the checkout counter.

This time, we ordered the restaurant’s most popular set meal, the Medium Set Meal, which comes with 15 pieces of gyoza.

While Hamamatsu gyoza are often served in a circular arrangement with bean sprouts in the center, Fukumitsu’s gyoza are served in rows instead.
For the set meal, we chose Japanese pickles instead of kimchi.
Taking a bite of the gyoza with their beautiful golden-brown crust, we were immediately struck by the crispy texture of the thicker wrappers. The thicker wrappers are delightfully crispy, making the gyoza easy to enjoy almost like a snack.
The filling brings together the natural sweetness of cabbage and the rich umami of meat, creating a well-balanced flavor.
The garlic is not overly strong, giving the gyoza a gentle and approachable flavor.

Large pieces of vegetables can be found throughout the filling, making each bite especially satisfying.
The house-made Japanese pickles are refined in flavor and exceptionally delicious, making them the perfect palate cleanser between bites.

The miso soup is also packed with rich dashi flavor, pairing wonderfully with the gyoza. According to the restaurant, many customers even order a second serving of miso soup for an additional charge.
Since we had the chance, we enjoyed the gyoza in three different ways: first on their own, then with a dipping sauce of vinegar and soy sauce, and finally with vinegar, soy sauce, and Japanese mustard (karashi).
The rich, savory flavor of the karashi enhances the taste of the gyoza even further.

Back in Gunma, I was used to eating gyoza as a side dish with ramen, so I was surprised when I first encountered Hamamatsu’s culture of enjoying gyoza as the main dish. Now, however, I’ve become a huge fan of Hamamatsu gyoza myself.
