This time, we visited Yoshokuya Misakubo, a long-established yoshoku (Japanese-style Western food) restaurant in Sasagase-cho, Chuo Ward, Hamamatsu City.

In addition to its signature hamburg steak and curry, the restaurant serves beef stew, gratin, and other Western-style dishes that reflect the chef’s commitment to quality.
What makes Yoshokuya Misakubo special is its superb Western-style cuisine, born from careful preparation.
Its hamburg steak in particular, known for being fluffy and juicy, has been served more than one million times over the restaurant’s 45-year history.
Read on to learn more about Yoshokuya Misakubo, a restaurant that draws fans from all over Japan.
Founded in 1983, the long-established yoshoku restaurant Yoshokuya Misakubo is now run by second-generation owner Chef Saito, who carries on its traditional flavors.
Chef Saito is a former soccer player. After training at local hotels and yoshoku restaurants, he now works as a chef.

The name “Misakubo” was chosen out of gratitude to the previous owner’s hometown, the former town of Misakubo in Iwata District (now Misakubo-cho, Tenryu Ward).
Misakubo is a town known for its lush forests and beautiful nature.
The ruins of Takane Castle, a mountain castle from the Sengoku (Warring States) period that stood on the border between the old provinces of Totomi and Shinano, are a Hamamatsu City Designated Historic Site located in Misakubo.
The front of the restaurant is filled with greenery reminiscent of Misakubo.

Inside, the space is decorated in calm shades of brown, and the warmth of the wood creates a comfortable atmosphere.
The restaurant’s time-honored flavors are supported by vegetables and rice carefully selected by food professionals.
Experts with a discerning eye choose the very best seasonal vegetables, which Chef Saito then turns into superb yoshoku dishes.
For the rice, the restaurant works closely with a rice meister it has partnered with for 40 years. After many discussions, they blend three varieties of Koshihikari rice, selecting the most delicious of each year’s harvest.

The rice is so delicious that it could be a main dish in its own right.
At Yoshokuya Misakubo, water is considered one of the seasonings. Every item on the menu is made with mellow-tasting well water drawn from the Tenryu River system.
A filtration system further refines the water’s quality.
As sake brewing has shown, water plays an important role in determining flavor.
Chef Saito’s recommendation is the “Hamburg Tomato Bacon,” which has been on the menu since the restaurant first opened.

With bacon and tomato stacked on top of the classic hamburg steak, this dish makes quite a visual impression.
Just look at the size of it!

We can’t decide where to start!
A generous half tomato is used, steamed until soft and tender. Its natural sweetness pairs perfectly with the hamburg steak.
The bacon has just the right amount of saltiness, bringing out the flavor of the demi-glace sauce.

The hamburg steak itself is fluffy and packed with the rich, savory flavors of meat and onions.
You can enjoy four different combinations: first the hamburg steak on its own, then with the tomato, then with the bacon, and finally all three together.
When we asked Chef Saito the secret to his fluffy hamburg steak, he told us the key is in how it’s kneaded.
Onions sautéed for four to five hours are mixed with the meat in just the right balance, so that the patty gently falls apart the moment you take a bite.

The rice, selected by the rice meister, is glossy and delicious too!

The “Hamburg Tomato Bacon” we introduced is a great choice, but the most popular dish on the menu is this “Classic Hamburg.”

The grilled seasonal vegetables are delicious too, and they go perfectly with the demi-glace sauce.
In the 2023 Family Income and Expenditure Survey, Hamamatsu, home to Yoshokuya Misakubo, ranked first in Japan for household spending on hamburg steak!
In Hamamatsu, hamburg steak can be considered one of the city’s most popular local foods, alongside unagi (eel) and gyoza (dumplings).
However, in 2025, the city slipped to third place.

Efforts to reclaim the top spot include selling bento boxes supervised by Chef Saito in collaboration with a local supermarket, and holding events such as the “Hamamatsu Hamburg Fair” together with local hamburg steak restaurants.
The next survey results will be announced in February 2027. Will Hamamatsu take back the top spot? Keep an eye on the results!

Chef Saito is also dedicated to food education.
He has taken part as an instructor in a project where local elementary school students become “marketers” and “POP creators,” making sales materials for Hamamatsu hamburg steak. Through activities like these, he is working hard to promote hamburg steak as part of Hamamatsu’s food culture.

Driven by the wish to bring more energy to Hamamatsu through hamburg steak, I began working with other independent hamburg steak restaurants in the city four years ago to help more people discover Hamamatsu hamburg steak.
Through food education at supermarkets and schools, I feel that the idea of “Hamamatsu as a hamburg steak town” is gradually spreading. However, it still hasn’t caught up with the city’s reputation for unagi and gyoza.
Hamamatsu is a wonderful city, blessed with good land, a mild climate, and favorable terrain, where plenty of delicious vegetables are grown.
By combining local ingredients with meat, hamburg steak becomes a dish with endless possibilities.
Using hamburg steak as a culinary tool, I strive to serve dishes that will make people think, “If I go to Hamamatsu, I want to eat delicious hamburg steak!”
I would be very happy to have your support. We look forward to welcoming you.
This time, we introduced Yoshokuya Misakubo.
Many of our friends and acquaintances are big fans of Misakubo, so we are delighted to be able to introduce the restaurant to hamburg steak lovers across the country.
You may think of Hamamatsu as a “gyoza town,” but it is actually a “hamburg steak town” too.
Be sure to try Yoshokuya Misakubo’s superb handmade hamburg steak! It’s so delicious that you’ll want to come back again and again!
