What began as a food stall near Hamamatsu Station has grown into a well-known local chain with multiple locations across Shizuoka Prefecture and is now one of the most iconic Hamamatsu gyoza restaurants.
One of the restaurant’s signature features is its serving style: pan-fried gyoza arranged in a circle with bean sprouts placed in the center.

Ishimatsu Gyoza is said to have originated the signature Hamamatsu gyoza serving style known as Kurumamori—a circular arrangement of gyoza—as well as the tradition of serving them with bean sprouts.
The restaurant’s signature dish, Ishimatsu Gyoza, is made primarily with cabbage and pork and is known for its light, refreshing flavor.
Wrapped in a thin, chewy skin, each dumpling is packed with the natural sweetness of cabbage and the rich umami of pork.

Hamataro Gyoza Center is located in the Nakagawa area of Hosoe, Hamana Ward, Hamamatsu City.

Hamataro was established by Toa Industry Co., Ltd., a manufacturer of gyoza-making machines.
One of its unique features is the opportunity to watch the gyoza production process through viewing windows.

The restaurant serves carefully crafted gyoza made with high-quality ingredients, including cabbage grown by contracted local farmers in Hamamatsu and Hamanako Sodachi, a locally raised brand of pork.
More than 10 varieties of gyoza are available at any given time, including the restaurant’s signature Red Gyoza and White Gyoza, as well as options such as Kimchi Gyoza and Shrimp Gyoza.
The two standard menu items are Red Gyoza, made with domestically grown garlic, and White Gyoza, which is made without garlic.

The dumplings are crispy on the outside and juicy on the inside, with the natural sweetness of cabbage and pork coming through in every bite.

Founded in 1962, the restaurant has passed down its gyoza recipe through three generations.
Its gyoza are known for their gentle flavor that brings out the natural sweetness of cabbage.
A popular choice is the Medium Gyoza (12 pieces).

Filled primarily with cabbage and ground pork, the dumplings are wrapped in a specially made thin skin.
